I recently attended a Gal-entine’s party where we had to bring our own charcuterie/platter style dish. I was really unsure of what to bring but settled just a few nights before the event on my mom’s Queso recipe and unlimited dipping vessels. This platter is sure to be a crowd pleaser at any birthday party superbowl party, church gathering, etc.
The queso dip is a recipe I grew up with at most family gatherings or parties. My mom would always have queso for neighborhood Halloween street parties, birthday parties and taco or burger nights! It was definitely a comfort food for my brother and I growing up. Mild sausage is the perfect subtle heat when you’re unsure if the crowd likes spicy food. The hot sausage definitely elevates the dip, but it may be too spicy for some.
Cheese Dip Recipe
- 32 oz 2% Velveeta
- 8 oz Cream cheese
- 1 can of mild Rotel
- Jimmy Dean (mild or hot) sausage
- 1/2 cup Milk
For garnish
- Paprika
- Chopped green onions
Queso dippers (purely a vessel)
- Pretzel bites
- Kettle chips
- Frozen popcorn chicken
- Snack size peppers sliced in half with seeds and pith removed
- Frozen Chicken Taquitos
- Tortilla chips
Instructions
- Brown the sausage on medium/high heat in a large pot. Break it into smaller pieces similar to the size of taco meat. Once it is fully cooked, drain the meat to avoid a really greasy dip
- On medium heat, add the remaining ingredients (milk and tomatoes, then cheeses) and stir occasionally until the cheese is melted. Check your temperature and stir to avoid burning the Velveeta.
- Take of the heat and your dip will thicken up, to loosen the dip (initially or when reheating) add milk.
Easy Cheese Dip Recipe
I don’t think a show stopping cheese dip can get much simpler than that! Easy to display in a large bowl, crockpot or serving platter with small dipping bowls.
